Leticia “Letty” Ellinger, beloved mother, entrepreneur, and world traveler, passed away on March 27 in Grand Junction, CO, at the age of 89. Born on February 9, 1936, in Rosario, Cavite, Philippines, Letty was the daughter of Alejandro and Victoria Doloiras.

Letty followed in her father’s footsteps—he was a U.S. Navy Petty Officer Second Class—by serving as a yeoman during the Korean War. For her dedication, she was awarded the National Defense Service Medal before receiving an honorable discharge.

Letty later married Mike Ellinger, and together, they built a loving family. She is survived by their three children, Steven, Susan, and Ann; three grandchildren, Jake, Brooke, and Nathan; and three sisters, Nancy, Myrna, and Evelyn, who will forever cherish her warmth, wisdom, and unwavering support. A devoted mother and stay-at-home mom, Letty instilled in her family a deep appreciation for hospitality, culture, and adventure.

Her passion for food and welcoming others led her to open a bake shop, then a restaurant, and finally a bed and breakfast and catering business in Vermont, where she created a home away from home for many. Her love for travel took her across the world to her favorite destinations, including Mexico, Spain, and Peru. Fluent in English, Spanish, and Tagalog, she embraced new experiences with enthusiasm and grace.

An accomplished tennis player and golfer, Letty remained active well into her late 80s, sharing laughter and competition with dear friends on the golf course. She was also deeply devoted to her faith and found joy in music, actively participating in church choirs and performing as a soloist with heartfelt dedication.

She leaves behind a legacy of kindness, resilience, and an adventurous spirit that will be deeply missed by her family, friends, and all who had the pleasure of knowing her.

A celebration of Letty’s life will be held on May 9 at Immaculate Heart of Mary Church. In lieu of flowers, the family kindly requests donations be made to HopeWest.
